Bored with eating watermelons the same old way? Worry not, because we are here to the rescue!! Scroll down to read the list of all the unique things you can do with watermelons this summer.
1. Blend into smoothies
Blend together 2 cups of seedless watermelon, 2 tablespoons of fresh mint and 1/3 cup of 2% plain Greek yogurt and you are good to go.

2. Watermelon glaze
Blend some watermelon with your favorite jam — mint or jalapeño are fantastic — and some peppery spices for a great sweet-and-spicy glaze to baste those vegetable kabobs (skewers) or chicken into something oddly new and exciting.

3. Fruit pops
Place the watermelon, lemon juice, sugar, and strawberries (optional) into a blender, and blend on high speed until the sugar has dissolved and the mixture is smooth. Pour the mixture into ice pop molds, and insert sticks or handles. Freeze until firm, for several hours or overnight.

4. Watermelon salad
Mix red onion with lime juice in a bowl, and set aside to marinate for at least 10 minutes. Stir some olive oil into the mixture. Toss the watermelon, baby cucumbers, and feta cheese together in a large bowl. Pour the red onion mixture over the watermelon mixture and toss to coat. Sprinkle mint over the salad; toss.

5. Pickles
Pare watermelon rind and remove all the pink portions. Cut rind into 1 x 2 inch pieces about 1 inch thick or into 3/4 by 1 inch cubes. Soak rind overnight in brine made by dissolving 1/4 cup salt in each quart of water (make enough brine to cover). Drain rind; wash in fresh water and drain. Combine the remaining ingredients and boil together for 5 minutes. Add rind a few at a time and cook until rind is clear (simmer about 30 minutes). Pack rind in hot sterilized jars, cover with boiling syrup and seal. Spices may be tied in a cheesecloth bag if desired. Cantaloupe rind, pumpkin or winter squash rind may be cut into pieces and pickled in the same way.
