I tried grandma’s age old Mango Delight Recipe and OMG! K-recipes

So you know one of those days when you just don’t feel like stepping in the kitchen to cook yet another Iftar to wow people? Well i was having one of those. Thanks to WAPDA for depriving us from electricity for over 11 hours, the drive to step into the kitchen was nil. Still something HAD to be made.

So while still relaxing in the AC, i started going through Grandma’s compilation of recipes over the years and one really shouted out to me. It stated “Quick Mango Fix” and that was enough for me to go ahead with it. So here goes:

Ingredients:
2 mangoes (cubed)
1 pack of cream
2 tbsp custard powder
3 tbsp sugar
half litre milk
Any cookies (i used crushed Candy biscuits)

Process:

  • Crush the cookies in a blender/food processor and press the powdered cookies to make a layer in the dish you’ll be serving inFOR THE CUSTARD
  • Pour less than half litre milk in a saucepan and add sugar (set aside the remaining milk for later use)
  • Meanwhile mix 2 tablespoons of custard powder in the remaining milk and mix well
  • When the milk on the stove comes to a boil, add the custard/milk mixture and whisk while it cooks a little.
  • Whisk slowly. Make sure there aren’t any crumbs in it.
  • Pour the custard on top of the cookie layer and let it cool

FOR THE CREAM LAYER

  • Whisk heavy cream with a little bit of vanilla essence and powdered sugar.
  • Whisk well.
  • Fold in the cubed mangoes

Pour on top of the custard layer

  • Top it off with either more mangoes or cookies. Let it chill and enjoy!

PRO TIP

You can even add another layer of cookies after the custard layer.
I added my cookie layer in the middle rather than the bottom

Honestly, it took me hardly 20 minutes to make the whole thing and it turned out to be lipsmackingly delicious! Mangoes are here so make the most of it!
